I don't have any specific suggestions, that IS a big topic! They're young, so you can't go TOO in detail. Maybe just go through basic daily care for a horse; grooming, feeding, cleaning, etc... Also, I think trying to impress them with how much of a responsibility they are is a good idea. You don't want to scare them off of it, but they need to realize that it's not all sunshine and daisies and there is a lot of work involved with owning a horse.
It's kinda exciting though, you get to possibly introduce some of the next generation to their passion in life!

If your mini is REALLY good.
The best thing for the little ones is hands on.
Use a sticky pad and write body parts, very general, tail, back, knee, etc..
Then let them come up 1 @ a time and stick him. Kinda like pin the tail on the donkey. Same can be done with saddle/bridle, grooming items and feed.
Crafts- Molassases and oats mixed together, than ice cream scoop that mixture into the small sized cones.
Paint old horse shoes, then the kids can add sparkly stuff, glitter, gems, googly eyes,... A make-it-take-it
Use your imagination, I think theres nothing better than kids & ponies
