I agree that its not a specific breed, you need to find one that is bomb proof, meets your abilities and criteria.

Personally, I prefer Quarter horses, optimally a Foundation bred. Why - they are level headed, most are smart enough to realize that the leaf, floating trashbag, rock, mud puddle etc. are not out to "eat" them. They are hard workers and don't generally goof around. And you can get them from sizes 17hh tall to 14 little army tanks.
If I were a gaited lover, I would probably prefer SSH's over TWH (The Walking horses' gait is generally has a more loose jointed "swing" feel, the Saddle Horse, more rounded movement, and the conformation of the Saddle horse is usually a bit stouter).

But really, as everyone says, it's more the personality of the horse and if it fits your needs. If you want excitement and spirit (and sometimes when you don't want it) - a hotblood such as a Thoroughbred or Arab. ( I don't prefer because I don't have the patience for goofiness and spiratic explosions haha, but, some people enjoy)...

Notable mild-tempered breeds: Drafts, Draft crosses, Quarters and Paints, Morgans, TWH's, SSH's

Good luck horse hunting!
